Roasted Capsicum and Cashew Pasta Salad
Prepare pasta of your choice.
Cut three peppers lengthways, drizzle with olive oil and roast in the oven for 30 mins.
Blend in a food processor with 100 ml parmesan, 15 ml olive oil and 2 ml dotSPiCE for GaRLiC LoVeRS and handful Margaret River Raw Cashew Nuts.
Stir through warm pasta.
Serve hot or cold.
Cook's tip: In order to blend or chop nuts easily - cover with boiled water and let it cool down to soften. Repeat twice.
